Ramen Santouka (Shinjuku Minamiguchi Branch)
With the flagship location in Hokkaido, this chain restaurant has expanded to have shops throughout Japan. They are best known for their shio (salt) ramen that is made from pork bones. The smooth white broth has a characteristic gentle and mild flavor, and there is plenty of body and umami without being overwhelming. The curly noodles have a medium thickness and a low water content. The shio ramen is recommended for first-time visitors, but the chashu pork ramen is the most popular.
